Beyond Corned Beef and Cabbage: A Traditional Irish Meal

Looking back over Washington County’s cultural heritage, German immigration played a major role in the make-up of local inhabitants. Although not as prevalent as German arrivals, Irish immigrants made their way into the Marietta area. German businesses made their mark on downtown commerce especially in regards to distinct food culture within restaurants, saloons, markets, bakeries, and butcheries. While Irish transplants owned and operated similar establishments, they largely assimilated their foodways leading to grossly exaggerated cultural stereotypes – such as corned beef and cabbage or the classic St. Patrick’s Day reuben sandwich – as being traditionally Irish. Join The Castle and The Cook’s Shop as we prepare a traditional Irish meal and learn the history of Irish food culture along the way.
Make-at-home menu includes:
- Coddled Pork with Cider
- Apple Cake
Recipes are included for all the menu items with ingredient suggestions for an authentic Irish taste. We’ll be cooking all of these menu items during the program. You are welcome to just watch, to cook some of the items along with us, or to follow along for the whole menu to create a delicious Irish supper.

Co-Presenter: Dagmar Kupsche – The Cook’s Shop
Dagmar Kupsche, owner of The Cook’s Shop in Marietta Ohio, discovered the joy of cooking as a child while helping her mother in the kitchen and watching Julia Child on TV. Her other talent, sewing, led her to an Apparel Design degree from Rhode Island School of Design, a career as a knitwear designer with The Limited and her own custom bridal gown business. Over the last ten years she has had the opportunity to be trained as a chef by Dave Rudie, a friend and mentor.
Co-Presenter: Kyle Yoho, Education Director – The Castle
Kyle Yoho has served as the Education Director for The Castle since 2015 and is an Adjunct Professor of Museum Studies for Marietta College. He received his BA in History from Marietta College and MA in Public History from Wright State University. Kyle has been an avid research, practitioner, and demonstrator of historical foodways for about five years. He recently taught a four part class for the Institute for Learning in Retirement at Marietta College on the history behind what we know today as American cuisine elaborating on the origin and influences of popular dishes.
